Wheatgrass is the freshly sprouted young green shoot of the wheat plant (Triticum aestivum).
Wheatgrass, simply put, tastes like grass, though it may have a slightly sweet flavor like green tea but with a stronger and more pronounced taste.
It is a great addition to smoothies, shakes, or consumed straight. Combine Wheatgrass juice with Salad dressings; Dips like guacamole and hummus; Fruity cocktails or mocktails; Cupcake frosting or chocolate truffles; or Soups to help balance the flavor.
Wheatgrass is not considered a Microgreen even though it is harvested before the plant reached maturity; this is because we can not consume the plant as is. Wheatgrass is very fibrous and our bodies are unable to digest these fibers, that is why we juice it!
Wheatgrass is mostly made up of cellulose which is not digestible in humans, although cellulose is found in many vegetables. (Cellulose is another word for fiber and we need fiber to help clean out our colon.) Whatever fibers we don’t digest, will eventually pass through our bodies. Due to the high level of fiber in wheatgrass, health professionals do not recommend consuming the freshly-cut wheatgrass shoots. The best and only way to reap all the nutritional benefits is by juicing wheatgrass.
Our Wheatgrass is organically grown. We source organic and non-GMO seeds and supplies. It is grown indoors on coconut coir under grow lights. By growing the wheatgrass indoors, this allows us the ability to control temperature, humidity, moisture, soil, mineral levels, and air flow, as well as minimize pests and pollutions on the Wheatgrass. This helps our plants grow to their full potential and allows us to insure their quality. NYT Farm grows in small batches and juice the wheatgrass within minutes of harvesting, then freeze-dry to lock in the nutrients.
While Wheatgrass is a wheat product, it does not contain gluten and is safe to consume if you follow a gluten-free diet. This may seem surprising since wheat is off-limits to people who avoid gluten. The reason wheatgrass is gluten-free is because the gluten is contained in the wheat seeds. NYT Farm cuts the wheatgrass by hand when it has grown between 8–10 inches (20–25 cm) high, well before the seeds appear. It’s then processed into juice, freeze-dried, and powdered, which maintains its gluten-free properties.
Good source of Vitamins A, C, E, K, and B Vitamins, as well as minerals such as Potassium, Iron, and Phosphorus, as well as Enzymes and Amino Acids. One of the most notable nutritional components of wheatgrass is Chlorophyll, with up to 70% of the plant consisting of this nutrient.
